Meet the Team
Chef Sef – Director of Culinary Services
Chef Seferino Apodaca, “Chef Sef,” was born in Fresno, Calif., got his hands into the food game as a young boy, busing tables and helping around an old mom-and-pop shop here in Grand Junction. Chef perfected his skills working under and with some of the best chefs from all over the country. He met the love of his life, Michelle, late in life. Together they have seven children and seven very beautiful and energetic grandchildren. Chef most recently was the chef at Community Hospital and the executive chef and director of Culinary Services of Colorado Canyons Hospital of Fruita, Colo. He brings to you his passion for food and his passion to share exciting and creative dishes.
Glenda Reust – Business Office Director
Glenda Reust is new to Solstice, having joined us to be our business office director. She comes to us with a rich background in business management and human resources in the retail bookstore and assisted living industries. In her off time, she likes to go to local restaurants and movies with her husband. She has two adult children in the area who she spends time with.
Tom Fuller – Building Services Director
Tom Fuller is a native of Florida and has been with Solstice for almost a year. He’s not new to building services, having worked at many large retirement communities in Florida. During his off time, Tom burns up the road traveling with his wife, Tammy, on their beloved Harley-Davidson motorcycles.
Betsy Thatcher – Director of Sales and Marketing
Betsy Thatcher has lived in Grand Junction since 1994, when she relocated from Huntington Beach, Calif. Betsy has over 32 years of sales and marketing experience. She is also very involved with the local Chamber of Commerce groups and nonprofit groups. Betsy loves working with seniors and counts many of the residents as friends since coming here in 2017. She has been married for 29 years and has two daughters, who live in the Denver area.
